The James Beard Foundation’s Blended Burger Project

Beginning Tuesday, May 30th through Sunday, July 30th, we will be participating in The James Beard Foundation's Blended Burger Project. It is a nation wide contest & challenge to make a "blended burger" by blending ground meat (we are showcasing lamb) with finely chopped mushrooms (we are showcasing crimini & Flat #12 oyster mushrooms) to create a delicious, healthier & more sustainable burger. Jill Gedra Forster
Jill Gedra Forster is the Owner of Lait Cru Brasserie and Nickel City Cheese & Mercantile, which operate side-by-side in the Horsefeathers Building on Buffalo’s West Side. After graduating from the New England Culinary Institute, Jill worked in kitchens across the country, extending from San Francisco to the Midwest, and found her niche – cheese. Jill gained experience as a cheese monger for several high-end grocers in Nantucket and Minneapolis, while raising her two young children.
Upon moving home to Orchard Park, NY, Jill opened Nickel City Cheese & Mercantile in Buffalo’s Elmwood Village. The European-style gourmet cheese and specialty food store has since grown into a bustling business, supplying countless local restaurants with cheese and other exclusive items, as well as offering Western New Yorkers unique, gourmet products.
Chef Will Petersen
Will Petersen is Head Chef at Lait Cru Brasserie, spearheading menu conception and creation with Owner Jill Gedra Forster. Before moving to Buffalo in 2007, Chef Will Petersen grew up in Monroe, NY. With a passion for culinary arts, Chef Will attended the Niagara Falls Culinary Institute, graduating in 2015.
Will has worked in some of Buffalo’s most esteemed kitchens, learning from significant influencers in the city’s culinary scene. This includes Park Country Club, Sea Bar in downtown Buffalo, and The Black Sheep on the city’s West Side.
